They enjoyed the food, but also observed a deeper kind of warmth and connection that moved them to say &#8211;\u00a0\u201cThat\u2019s what I want to spend my life doing.\u201d\u00a0\u00a0But how do you capture the feeling of family and friends around the table and the healthy Mediterranean lifestyle? Inspired, Keith and Amy returned home with a stack of photographs and a vision to import their experience by opening the first of many Mediterranean cafes in 1998.
